Smoke-Roasted Spicy Almonds
Flavored roasted nuts have become wildly popular…and expensive. But they are easy to make on your Traeger. Once you have the basics down, make this recipe your own. For example, soak the almonds in soy sauce for an hour, drain, and dust with Chinese 5-spice powder. Or sprinkle with dry ranch dressing mix. Roast with cinnamon and cloves and add to granola or baked goods.
Recommended Pellets: Pecan, Hickory
- 1 pound raw almonds, unsalted
- 1 to 2 tablespoons olive oil or vegetable oil
- 1 tablespoon Trager Cajun Rub, or more to taste, or your favorite rub
- 2 teaspoons sugar (optional)
Combine the almonds and 1 tablespoon of the olive oil in a mixing bowl and stir until the nuts are coated. Add more oil if needed. Sprinkle lightly with the Traeger Cajun Rub and sugar, if using, and stir until the almonds are evenly coated. Tip onto a rimmed baking sheet lined with parchment paper or aluminum foil.
When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 300 degrees F and preheat, lid closed, for 10 to 15 minutes.
Roast the nuts, stirring occasionally, for about 30 minutes. Let cool, then transfer to a container with a tight-fitting lid if not serving immediately.
